Bacon, salami, and sweet potato hash
This is such a delicious and healthy take on breakfast! We use sweet potatoes in our scrambled eggs every morning (literally), so changing it up with a hash and sunnyside up eggs is perfect to liven up our breakfasts! Gorgeous!
So , here are the ingredients :
- 2 medium sweet potatoes
- 1 medium onion, chopped
- 5 – 6 smoked bacon slices , 1/2-inch pieces
- 1 red and 1 yellow bell pepper, chopped
- 2 tablespoons olive oil
- 1,1/2 teaspoons salt
- 1/3 teaspoon pepper
- 3 cups baby spinach leaves ( optional )
- 8 ounces dry salami, casing removed, cut into 1/2-inch cubes
- Zest of 1/2 medium orange
- 2 – 3 large eggs
And now the instructions 😀 :
1.Cook the bacon over medium-high heat in a 12-inch nonstick skillet, stirring occasionally, until crisp, 10 to 14 minutes. Remove the bacon using a slotted spoon and drain on paper towels.
2.Add the potatoes, 1,1/2 teaspoon salt and 1/3 teaspoon pepper to the pan juices. Cook, stirring frequently, until brown and crisp, about 20 – 25 minutes. Remove the potatoes using a slotted spoon and drain on paper towels.
3.Add the oil, onion, bell pepper, 1/3 teaspoon salt and 1/3 teaspoon pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 – 7 minutes. Add the spinach ( optional ) , salami, orange zest. Cook until the spinach is wilted, about 5 minutes. Stir in the bacon and potatoes.
4.Make 2-3 indentations in the hash and break an egg into each. Cook until the eggs are cooked through, 5 to 7 minutes.
