Caramel and Almond Tart Recipe
This week I throw a surprize birthday party for my best friend . Beside the birthday cake , which was bought by her boyfriend from her favorite pastry shop , I thought to bake my favorite tart who always is a hit . My friends always are excited when I bake my tart , so , because always is not enough , this time I will bake 2 tarts . I will share with you the ingredients for 2 tarts . My tart pan has 10 inches and I can cut 12 thin slivers .
2 ½ cups plus 1 Tbs. all purpose flour
4 Tbs. sugar
1 tsp. salt
2 stick unsalted butter, melted
4oz. dark chocolate, finely chopped (scant ½ cup)
3 cups slivered almonds
½ cup heavy cream
4 Tbs. honey
1 tsp. salt
1 ½ cup plus 2 Tbs. sugar
1. Preheat oven to 350°F.
2. Crust : Mix together flour , sugar , and salt in medium bowl . Stir in melted butter . Press dough into tart pan with removable bottom . Prick dough on bottom and sides, and bake 20 – 25 minutes , or until pale golden brown . Sprinkle chocolate over Crust , and let stand 1 minute . Gently spread chocolate over bottom of tart with spatula . Cool , then chill 30 minutes .
3. Filling : Spread almonds on baking sheet, and toast in 350°F oven 15 minutes, or until fragrant and golden brown.
4. Heat the cream, honey, and salt in a small saucepan until it’s hot. Remove the saucepan from heat .
5. Stir together sugar and 1/2 cup water in a medium saucepan , and bring to a boil over medium-high heat . Cook about 10 minutes , or until sugar has caramelized to copper color . Remove from heat, and stir in the warm cream mixture until smooth . (Place the pot back on low heat if the sugar is still hard) . Stir in the toasted almonds . Spread the Filling over the Crust . Cool , then refrigerate . Bring it to room temperature before slicing .
