LAMB STEW WITH GREEN BABY ONIONS AND GARLIC
- 1 kg lamb meat, diced
- 1 chopped onion
- 1 tablespoon flour
- 1 cup fresh chopped dill
- 150 ml Dil
- 20-30 green baby onlon stalks
- 20-30 green baby garlic stalks
- 1 tablespoon tomato paste
- 1-2 tablespoons red vinegar
- ground pepper
Cut green baby onion and garlic in pieces about 10-12 cm long; stir them fry in a pan with hot oil, until just tender, then remove from pan and drain. In the same oil stir~fry meat and chopped onion, with salt and some ground pepper, until meat is light brown and onion is transparent. Add to pan warm water to almost cover meat; cook covered, on low heat, until the meat is cooked through. Mix flour with a little cold water, vinegar and tomato paste, and pour this sauce over the meat in the pan. Add green onion and garlic pieces, stir gently to blend, and let it cook for 5 more minutes. Serve hot sprinkled with chopped dill.
Tip: for a special look, you can stir-fry greed baby onions and garlic without cutting them. Remove from pan when soft, let drain a little, then make a bow of each stalk. For the rest, you proceed the same.
