Lentil Cream Soup
Lentil cream soup:
– 300g red lentils rinsed well
– 2 large carrots
– 1 onion
– 1 parsnip
– 2 sticks apio / 100g celery
– 1 tablespoon paprika
– 1 tablespoon tomato sauce / tomato juice
– salt and pepper
We boil all ingredients and mix . Red lentils simmer quickly, so add the remaining vegetables when are almost boiled .
Note: For an extra flavor , optional saute some onions and carrots and put them over the boiled vegetables before we mix them all . Fry in a little olive oil the black homemade bread croutons with marjoram .
