I coveted at the sweetness of green nuts 😀
– 1 1/2 kg green walnuts
– Sugar 500 g
– 250 ml water
– 1 tablespoon honey
– 2 cloves
– 1 stick cinnamon
– 1 vanilla
For larger amounts, ingredients doubles.
With thick household gloves, peel walnuts to pit white. The shells may be used for green walnut liqueur (mine is for 15 to 20 days to macerate in refined alcohol).
Walnuts cleaned are left in cold water for 24h, preferably in the refrigerator, covered with a plate turned to keep them under water.The water is changed 3-4 times during this time.
The next day are drain and rinse well.
In a saucepan put sugar, water, honey and lemon juice to boil and stir until sugar dissolves. When the syrup boils, put the walnuts and spices. Boil on low heat, stirring often, until the syrup starts to law, not very much, otherwise the sugar will caramelize. At the end put it in sterile jars.
