SALAD WITH STUFFED CHERRY TOMATOES AND ASPARAGUS
Ingredients for 4 servings :
-1 kg of green asparagus
-salt and pepper
-2 ties of ruccola
-1 lettuce
-250 g cherry tomatoes
-4 tablespoons pine kernels
-2 tablespoons with sliced green onions
-100g low fat cottage cheese
-2 tablespoons lemon juice sugar
-2 tablespoons olive oil

Instructions :
- Peel the asparagus rods in the right lower third and boil in salted water 6 min.
- Cut the top of the cherry tomatoes and empty them . Fry pine kernels . Chop a half of kernals and mix it with cheese and green onions , salt and pepper . Stuff the tomatoes . Mix red core with lemon juice , sugar , salt , pepper and oil . Add the chopped onion and leave to marinate . Put on plates the lettuce leaves , tomatoes and the asparagus sliced diagonally ; drizzle with dressing .
